Pizza!

Thanks to my mother in law for finding this wonderful Pizza Crust recipe. I have tried a lot of different pizza’s and up until now Chebe brand was my favorite. This is easy to make and is not dry so no need to put on a lot of sauce. It is nice and moist. Here is what you need:

  • 1 tbsp yeast
  • 1 1/3 cup milk
  • 1 tsp sugar
  • 2 1/2 cups glute free flour
  • 2 tsp Xanthan Gum or 3 tsp Guar Gum (if using a all purpose blend that already has these consider omitting or doing half)
  • 1 tsp olive oil
  • 2 tsp cider vinegar
  • 1 tsp salt

Heat milk so that it is warm. Combine the milk with the sugar and yeast in a small mixing bowl and set aside.

Combine the flour, salt and gum. Add the oil and vinegar to the yeast mixture then add to the flour mixture and mix well.

Place dough onto an heavily floured board (rice flour) and knead the dough for several minutes (or use the dough hook on your mixer), working until the dough is pliabel and not sticky. Seperate dough to either make 2 medium thin crust pizzas or keep together for one large medium crust pizza. Place on a greased pan (or a heated pizza stone). Bake at 400 until the top of the crust gets just a hint of color- approx 10 minutes.

Remove from oven then add whatever toppings you like. Bake until toppings are well done and cheese starts to brown (approx 10-12 more minutes)
