I used to be all about simplicity when it came to baking. I have grown to love cooking now but one of my favorite quick and easy recipes is still my peanut butter cookies that came from a 4 Ingredient Cook Book.
All you need is 1 cup of crunchy or creamy peanut butter; 1 egg, 1 cup of sugar and 1 tsp vanilla (I now use Nielsen Massey Vanilla Paste).
Preheat oven to 350. Mix ingredients together and form into 1 inch balls.
Press flat with a fork making a checkered pattern.
Bake for 10 minutes. Let cool for a few moments.
Once done you can eat them as is or sprinkle just a little bit of sugar on them before moving them to a cooling rack. You can use this to make Peanut Butter Blossoms as well. To do so just use creamy peanut butter and do not press down with a fork. Once cooked press a hershy kiss in until the cookie cracks a little then let cool. I do have an actually Peanut Butter Blossoms as well.
