|Salmon w/ Orange glaze, Quinoa, garden salad with Strawberry Vinaigrette|
Tonight I tried a recipe that was printed in one of our local grocery store ads. I changed it up just a bit so I will post it is as with marking what I changed.
What you will need:
- 3-4 4oz Salmon Fillets
- 2tsp olive oil
- 1 minced garlic clove
- 1 cup diced green pepper (optional- I left this out)
- 2tbsp Orange Marmalade
- 1tbsp Orange Juice
Preheat over to 425
Place the fillets skin side down in a greased baking dish. Cook for 12-15 minutes or until the salmon flakes with a fork
While that is baking in a saucepan heat up oil and saute the garlic and pepper until tender (about 2 minutes) add in the Orange Marmalade and the Orange Juice and heat through.
Spoon over salmon to serve
