Nacho Casserole #Recipe

Last night we tried a new recipe. It was really good, my kids both really liked it and my son even had seconds! It was really easy to throw together. Total cook and prep time was about 30 minutes! This is just a regular recipe that is naturally gluten free! I found this recipe on and glad I tried it!

What you need:

  • 1lb ground beef
  • 1 1/2 cup chunky salsa
  • 10 oz of whole kernel corn (drained)
  • 3/4 cup creamy salad dressing (e.g miracle whip- be sure to check labels!)
  • 1 tsp chili powder
  • 2 cups crushed tortilla chips (check labels some have wheat in them)
  • 2 cups Colby Cheese (a monterey jack or taco cheese blend would work as well)

Preheat oven to 350 and grease a 2qt casserole dish.

In a frying pan brown the beef. While that is cooking in a bowl mix together corn, salsa (i used a restaurant style salsa since my son and i don’t like chunks of peppers and onions), mayo and chili powder. Once the beef is cooked drain and add to the corn mixture

In the casserole dish spread about half of the beef mixture on the bottom, top with some cheese, then chips. Repeat with one more layer and then spread some cheese on top of the chips.

Bake in the oven for approx 15-20 minutes, until cheese is melted and dish is thoroughly heated.
