Nutty Chocolate Chip Cookies- Guest Post

Here is another Guest Post for you guys. I wanted to make a quick note. For the flour I recommend using Gluten Free Pantry All Purpose Flour mix. I have been able to substitute it on a lot of recipes and not change the flavor of the recipe. Also a reminder to make sure your Oats are GF.  ~Enjoy!~

I am always looking for a fun new cookie recipe! Me being me, it usually involves the ingredient chocolate some how! Yes, I love the easiness of getting recipes off the internet but I do have a hankering for the old fashion cook book. The other week I was in a book store, (looking for a dog training book) and a book called 500 Best-Ever Recipes CHOCOLATE caught my eye. This is the first recipe I tried out and I loved it, (The Hubby not so much.)
Nutty Chocolate Chip Cookies
Makes about 20
1/2 cup butter (margarine in my case)
1/2 cup brown sugar
2 eggs, lightly beaten (I didn’t beat them a head of time and it still worked!)
1 tsp Vanilla (It got away from me but the cookies where still yummy)
1 1/4 cup plain all purpose flour
1 cup rolled oats, (I had none, so used quick oats. worked just as well)
1 cup plain chocolate chips, (semi sweet)
1 cup chopped pecan nuts.
1. Slowly added each item into my kitchen aid bowel and mixed on high until dough substance.
2. Chill mixture for at least one hour. (I liked this aspect because I can make the dough a head of time)
3. Pre heat oven to 350.
4. Grease 2 pans.
5. Using two spoons, place mounds on tray. I chose not to flatten cookies but you can if desired.
5. Bake for 10-12 minutes (best under cooked) and make sure to take them off the cookie sheet right away so the melted chocolate doesn’t stick to the sheet!
