Lasagna Recipe

I love Italian food! There is just something about it and it has been really hard to give up my pasta when I was diagnosed with Gluten Intolerance. One of my “mission” items has been Lasagna. I have never been able to get Gluten Free noodles to cook right and finally I found a brand that has done just that! So here is my recipe. Of course this works with regular noodles as well!

2 large cans of tomato sauce
1 can of diced tomatoes
1 can of tomato past
1lb cooked italian sausage or cooked ground beef
garlic powder
Italian seasoning blend (or oregano, thyme, rosemary and basil)

30 oz of cottage cheese
3 large eggs
4 cups shredded mozz cheese or Italian cheese blend
1 box Lasagna noodles (uncooked)- I used Jovial Brown Rice Noodles but any lasagna noodle will work

Prepare the sauce in a large pot for the seasonings add until it is to your family’s liking

Preheat oven to 375 and grease a 9X13 dish. Mix 3 eggs into the cottage cheese until well blended. Start with spreading a little sauce on the bottom and then putting a layer of noodles down.

Add some sauce on top of the noodles

Place a layer of cottage cheese on top of the sauce

Generously layer some shredded cheese

Top with noodles

top the noodles above with a layer of sauce and cheeses, do one more layer of noodles then just top with sauce

Cover with foil and bake for 45 minutes. Uncover and top with cheese. Bake for an additional 15 minutes. Remove from oven and let sit for 5-10 minutes
