During the summer there is nothing like a cool, crisp, cucumber salad! I found a recipe that we all enjoy but there are many variations to this that you can do. This is a great recipe that is quick in easy to whip up for those sudden dinner parties, or for your summer BBQ’s!
What you need:
3-4 Med to Large Cucumbers
1/2 a tsp of dried dill weed (can use more or less to taste)
4 tsp distilled White Vinegar (please read labels if GF- I used an Apple Cider)
1/4 cup Sugar
Peal the cucumbers and then slice them up into thin pieces. Mix in vinegar, sugar, and dill weed until all the cucumbers are well coated (the sugar will disolve). You can serve right away but I recommend chilling for at least 20 minutes!
And that is it! It takes me about 10 minutes to make this. As mentioned there are numerous variations. You can keep all the ingredients above and add about 1 cup of mayo. I have seen people add onions. I even had one recipe recently that had carrots, cucumbers, yogurt, and mayo (that was really good- had it at my in laws!). The possibilities are endless!
