Salmon with Garlic Lemon Butter Sauce

It has been WAY to long since I have posted a recipe. I am trying to get better about keeping up the blog and sharing recipes. At least that is my goal. Along with eating healthier and exercising! I am really starting to change my meal mentality to fresh and I am using things like fresh squeezed lemons, fresh parsley, fresh basil, ect. So far I have not been disappointed!

So tonight I really had no intention on blogging this (hence the poor quality picture). I came across this recipe online thanks to Cooking with Class. I had to adjust because well my pans suck so for the pan seared part that it is suppose to be head over to her site where you will find the recipe.

Before you start preheat your oven to 400 degrees.

Here is what you need:

  • 4 skinless salmon fillets
  • salt and pepper
  • 2 garlic cloves minced
  • 1/4 cup low sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1/2 tsp honey
  • 3 tbsp + 1 tsp butter
  • minced fresh parsley (for garnish)
  • Lemon slices (for garnish if wanted)

Let the salmon set out while you prep your cloves, lemon juice, and parsley and pre heat oven. Pat salmon dry and then season on both sides with salt and pepper. Place in a greased glass cooking dish and put in preheated (400 degree) oven for 10-15 minutes (cooked through and should “flake”)

While the salmon is cooking melt 1 tsp of butter in a small sauce pan. Add the garlic and saute until lightly browned. Pour in chicken broth and lemon juice and simmer until reduced by half. Add in remaining butter and the honey and whisk until well combined.

Plate the salmon when it is done and spoon the sauce on it. Top with a bit of parsley and enjoy!

Ingredients

  • 4 (6oz) skinless salmon fillets
  • Salt
  • Pepper
  • 2 garlic cloves, minced
  • 1/4 cup low sodium chicken broth
  • 2 tbsp fresh lemon juice

  • 3 tbsp + 1 tsp unsalted Butter
  • minced parsley

Instructions

  1. Let salmon sit at room tempture during prep work- Preheat oven to 400 and prep ingredients
  2. Dab salmon draw then season with salt and pepper. Place in a greased glass baking dish and bake for 10-15 minutes.
  3. While salmon is cooking melt 1 tsp of butter in a small pan and saute garlic. Once lightly browned add chicken broth and lemon juice. Simmer until reduced by half.
  4. Add remaining butter and honey to pan and whisk until well combined.
  5. Once salmon is done (will be flakey) plate and top with sauce and garnish with parsley
