It is that time of year again! Super Bowl Sunday is just around the corner! I am actually excited for this one. Normally I only watch it for the commercials but this year my Broncos are in it so I will actually pay attention to the game! Now comes the question- what snack food do we have?!?!?!
Well Good Cook has challenged us to come up with a great Football dish for all the football parties out there! I was really excited about this challenge. Plus it gives me a new recipe for you guys! So I present to you: Pizza Poppers! So dig out your mixing bowls and your cookie sheets and get ready for the big game!
Let’s start with our dough. You will need:
2 1/4 cup (may need a bit more) of an All Purpose Flour Blend (I used Betty Crocker Rice Flour Blend on this one
2 tbsp sugar
2 1/4 tsp (or 1 packet) of Fast Rising Yeast
1/2 tsp salt
1 cup very warm water (120-130 degrees)
2 tbsp oil
1/4 tsp xanthan gum
Mix together 1 cup of the flour, sugar, salt, yeast and xanthan gum (see note below) in a medium bowl. Slowly add in the water and the oil. Beat on a medium speed for 2 minutes. Then by hand need in the remaining 1 1/4 cup of flour and knead in until dough is smooth and elastic. You may need more the 1 1/4 cup you may need less so add in 1/4-1/2 cup increments. Set in a warm place to rise for 15 minutes.
While that is rising pull out a cookie sheet and grease it, also preheat oven to 450 degrees. Get your pepperoni and cheese ready as well. When the dough has risen start making your poppers
First- take a ball of dough and flatten it in the palm of your hand. Then place the pepperoni on it, then the cheese, then fold it over and pinch all edges together. You should be able to pinch it close enough where you can not even see the seams. Then place on the baking sheet. The dough will rise a bit while you make them and that is fine. Brush with some melted butter if you would like (helps give it a nice golden color).
Bake for about 15 minutes and serve!
This recipe makes about 20 poppers. A little note: to help your gluten free flour rise you may need to add either xanthan gum or guar gum (which ever one your all purpose flour does not have). If your flour does not have either one then add 1/4 tsp of each. If you are not gluten free no worries- this works with regular flour as well!
