Homemade Mint Chocolates ~ #Recipe #goodcookcom

For some reason one of the things I think of when it comes to spring is Mint. I don’t know if it is because of the freshness of everything but mint just comes to mind. I’m weird I know!

I recently received a Spring Bark Mold from Good Cook (sponsor). We were given the challenge of creating something with these molds. My mind instantly went to Andies Mints. I love those little chocolate mints. So I thought I would make some of my own. It can’t be that hard right?

Good Cook has some really cute items in their Sweet Creations Spring Cookware Tools collection. One of them is a really cute spatula that says “Hop into Spring” and then a really cute Silicon Mold (both pictured above), among some really cute spring cookie cutters and more.

On to the challenge: to make something using this wonderful little mold! Here is what you need:

  • 2 bags of milk chocolate chips (11oz bags each)
  • 1 bag of white chocolate chips (11oz bag)
  • mint candy flavoring (do not use mint extract because that will water down your chocolate)
  • green coloring
  • Mold or a pan 
Step 1: dump one bag of chocolate chips in a microwave safe bowl. Microwave in 30 seconds increments stirring between each one until melted and smooth. Pour into the mold (or onto a pan covered with wax paper). Place in the fridge to cool while you do step 2
Step 2: in a microwave safe bowl melt the white chocolate the same way you did the regular chocolate. When melted and smooth add some green coloring until it is to the shade of green you would like. Then add a few drops of the candy flavoring (this is a bit stronger then an extract so you do not need to much of it). Pour the mixture onto the first layer of chocolate. Place back in fridge to cool while you do the last step. 
Step 3: Melt the last bag of chocolate chips. Pour on top of the mint layer. Place in fridge to cool. Once completely hard (takes a few hours) pull the mold off and cut into pieces. 
I love how easy this mold was to use and how cute the designs on it are. And this chocolate recipe could really be changed up to any flavor. On the white chocolate you can add some pink with a raspberry flavor. The possibilities are endless with this one!

Strawberry Muffins ~Recipe

Lately the wonderful Good Cook Bloggers have been talking about Bread. Oh how I love bread! And one of them has created a recipe book called “Make Ahead Bread: 100 Recipes for Bake-It-When-You-Want-It Yeast Breads“. So it inspired us to give some bread recipes a go! Now Donna over at Cookistry has some amazing recipes! So it is only right for her to create a cook book!

So in celebration for this wonderful event and because I had received some strawberries to try out from Wyman’s (you can view that review HERE). I thought I would make Strawberry Muffins. I am in love with my Good Cook Muffin pan so any excuse to use it is good for me! Now, I will confess- this recipe is not 100% my own. My daughter has been wanting to make a recipe out of her Strawberry Shortcake cook book. In it was  recipe for Blueberry Muffins. So I converted it to Gluten Free and used Strawberries instead!

So here is what you need:

  • 3 cups of flour- I used Betty Crocker Rice flour- do not pack into the cup
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt *I omit this because my flour blend has salt in it*
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups milk
  • 1 stick melted butter
  • 2 cups chopped strawberries


Preheat oven to 350 degrees.

First in a medium bowl mix together the flour, baking powder, baking soda, and salt.

In another bowl mix together, sugar, eggs, milk and butter.

Slowly add the flour mixture to the milk mixture until well blended.

With a wooden spoon slowly add in your strawberries and mix well!

Spoon into a prepared muffin pan until 3/4 full. Bake for 20-25 minutes or until toothpick comes out clean.

This makes about 30 muffins!

Big Game, Big snacks- Pizza Poppers! #Recipe

It is that time of year again! Super Bowl Sunday is just around the corner! I am actually excited for this one. Normally I only watch it for the commercials but this year my Broncos are in it so I will actually pay attention to the game! Now comes the question- what snack food do we have?!?!?!

Well Good Cook has challenged us to come up with a great Football dish for all the football parties out there! I was really excited about this challenge. Plus it gives me a new recipe for you guys! So I present to you: Pizza Poppers! So dig out your mixing bowls and your cookie sheets and get ready for the big game!


Let’s start with our dough. You will need:

2 1/4 cup (may need a bit more) of an All Purpose Flour Blend (I used Betty Crocker Rice Flour Blend on this one
2 tbsp sugar
2 1/4 tsp (or 1 packet) of Fast Rising Yeast
1/2 tsp salt
1 cup very warm water (120-130 degrees)
2 tbsp oil
1/4 tsp xanthan gum

Mix together 1 cup of the flour, sugar, salt, yeast and xanthan gum (see note below) in a medium bowl. Slowly add in the water and the oil. Beat on a medium speed for 2 minutes. Then by hand need in the remaining 1 1/4 cup of flour and knead in until dough is smooth and elastic. You may need more the 1 1/4 cup you may need less so add in 1/4-1/2 cup increments. Set in a warm place to rise for 15 minutes.

While that is rising pull out a cookie sheet and grease it, also preheat oven to 450 degrees. Get your pepperoni and cheese ready as well. When the dough has risen start making your poppers

First- take a ball of dough and flatten it in the palm of your hand. Then place the pepperoni on it, then the cheese, then fold it over and pinch all edges together. You should be able to pinch it close enough where you can not even see the seams. Then place on the baking sheet. The dough will rise a bit while you make them and that is fine. Brush with some melted butter if you would like (helps give it a nice golden color).

Bake for about 15 minutes and serve!

This recipe makes about 20 poppers. A little note: to help your gluten free flour rise you may need to add either xanthan gum or guar gum (which ever one your all purpose flour does not have). If your flour does not have either one then add 1/4 tsp of each. If you are not gluten free no worries- this works with regular flour as well!
